PR XVII トンカツ卵とじ Tonkatsu Tamago toji

Sekalian buat Pr sekalian buat menu malam, hari ini bikin tonkatsu tamago toji..
Resep originalnya bisa liat disini. Untuk jelasnya, nih ditulisin resepnya biar bisa nyoba
Bahan
4 potong daging babi [utk steak]
8 bh telur kocok, [ 2 bh utk 1 potong daging]
1 bh bawang bombai, iris tipis

Pelapis
1 sdm tepung trigu
1 bh telur
1 cup panir

Saos
300 ml air kaldu
3 sdm sake
2 sdm mirin
4 sdm gula
5 sdm kecap asin
Cara
- Potong pinggir daging 4-4 bagian, agar permukaan bisa rata wkt digoreng
- bubuhin pelapis, goreng mpe matang, potong2
- buat saos, masukkan bwg bombai masak mpe lunak, masukkan daging, masak
mpe bumbu meresap
- tuang kocok telur, matikan kompor segera sth telur dimasukkan, pindahkan ke piring yg brisi nasi..siap disantap

Enak banget, kuah meresap...husband suka banget...kapan2 bikin lagi katanya...hehehe

Christmas is almost here!

And I'm not ready for it yet. Today I finally ordered David's dad's gift. I still need to get his mom a gift, and our two people for my side of the family; plus the two we have for David's dad's side of the family. Oh, and I need to get David's grandma something too. Not sure what I am getting her or Mom G.

David's birthday was Monday. He ended up opening up his Christmas gift early. :-p I got him a xbox this year. Not the 360, the original one. It came with a racing game too. He has been wanting one for a while, and with us both working at good paying jobs this year, I could afford to get it for him without going into debt for it. So right now he is trying to master the car racing game while I am sitting here typing this.

Our house inspection was on Tuesday. No major problems, which was good for a house that is 76 years old. The plan is still to close on the 23rd. We are going to drive out to West Va the weekend after Christmas to pack and bring stuff out.

We had ice last night. That was fun trying to walk out to the car this morning. I didn't want to fall and break something. That would not have been a good example to my patients, haha!

Nothing But the Best

My friend Monika came over for dinner last night and I made broccoli mascarpone soup and potato pancakes with apple compote and Greek yogurt. She claimed everything was excellent and I assured her that it was "nothing but the best" for her. Let's face it, I added, "nothing but the best for me!"
It's true, I refuse to eat bad food. There is too much good food out there to waste time, calories, and stomach space on bad food. I made some rice pudding the other day which turned out bitter and disgusting. I won't eat it, even if it wastes a cup of rice. Too bad. It will end up in the garbage whether it passes through my body or not, so why suffer?
Refuse to eat bad food. Put down your fork and wait until you find something worthy of your taste buds. When you eat bad food, you overcompensate by eating something else you really like later. Now you've just eaten twice as much as if you ate the good food to begin with. Refusing to eat bad food doesn't mean playing it safe. It just means trying a lot of foods, and not having to finish something you hate.
When I spend a long time cooking something, only to have it turn out bad, it's disappointing to throw it away. I'm tempted to try and "fix" it or choke down a little bit at a time. But it doesn't work, and it's just not worth it. I'll only remake the recipes that are great, while making my friends believe they get nothing but the best from my kitchen.

"The Cuccìa of Saint Lucia"

The "Cuccia” is the typical sweet of feast of Saint Lucia (13 December)

Traditional recipe with cream of ricotta:

Ingredients: 500gr of wheat, 200gr of icing sugar, 1.5 kg of fresh ricotta, candied fruit 50gr (preferably cedar,orange or pumpkin) cut into pieces, 200gr of dark chocolate.
Processing: Prepare the grain: put in a pot with cold water for three days, changing the water continuously. The evening before the feast, cook the grain in a saucepan covered with water, add a pinch of salt, drain well.

Prepare cream: to sieve (you can also pass it with the blender) the ricotta, add the sugar and mix well, break the chocolate into small pieces, add the cream of ricotta and candied fruit, chocolate pieces and mix gently (someone also adds cinnamon).
Finally add the wheat. You can also store in the refrigerator.

Recipe with milk cream:

Ingredients: 500gr of wheat, 120gr starch, 1 liter and a half of milk, 200gr sugar, 200gr of dark chocolate,50gr candied fruit into pieces.
Processing: Prepare wheat as above.

For cream, dissolve the starch in cold milk, stirring with a whisk, cook over low heat, stirring constantly. Turn off the fire as soon as it is thickened. Add the grain. Allow to cool and add the chocolate reduced in little pieces and candied fruit pieces.
This is a base for other types of creams, chocolate, cream yellow and so on.

My Friends call it meat stuffed with meat wrapped in meat .

"The Gattò" of potatoes

The "Gattò" is a typical dish that is eaten in Palermo for the day of Saint Lucia (13 December)

Ingredients:

2 kg of potatoes old, 2 eggs, 50gr grated cheese(caciocavallo or parmesan), parsley, breadcrumbs, olive oil.
For the filling: 500gr of chopped, 1 tin of tomatoes peeled, 200gr for frozen peas, 1 onion, nutmeg, 1 bay leaf, half a glass of wine.

Processing:

Boil the potatoes with the peel. When they are cooked and still hot, peel and crush them. Add two eggs, cheese and shredded parsley. Knead well, if it appears too soft, add breadcrumbs.

For the filling: fry in oil extra virgin olive, a minced onion, add the chopped, then add the wine. After some minutes add the pulp of peeled tomatoes.
Add the nutmeg and add a bay leaf and salt and pepper according to taste. Far cook for about 30 minutes. Then add peas and let cook until they will not be soft. At this point, anoint with oil a baking dish and sprinkle with breadcrumbs.

Divide into two parts the mixture of potatoes, with one part cover the pan, season with the sauce, cover with the remaining dough. Anoint the surface of “Gattò” with oil and smooth with your hands, finally add breadcrumbs. Put in hot oven at 180 degrees for about 45 minutes.

Scalloped Potatoes



Scalloped Potatoes
Also called potatoe bake
Cream, Onions, Bacon, potatoes, shiitake mushrooms, cheese ,chives and thyme (or a little nutmeg, parsley ,rosemary,garlic)

Fry the bacon till crispy, Peel and slice the potatoes real thin. Dice the mushrooms and onions .Layer everything and pour a little cream over each layer . Sprinkle cheese on top cover with a lid or tin foil . Cook at 240 250c for an hour or till potatoes are soft.
You can cook in your toaster oven.

SPRING ONION RINGS


Ingredients:
Spring onions ....... 2 bunches
White flour ............ 2-3 cups
Salt ........... to taste
Ajinomotto
Oil
Method:

1. Cut the spring onion finely. Sprinkle 1 tbsp. salt. Mix and leave it for 5 minutes.

2. Knead the flour adding 1/2 tsp ajinomotto, salt, 2 tbsp. oil and the required quantity of water to a soft dough.

3. Squeeze out the water from the spring onion completely. The quantity now will be half. Mix 1/2 tsp of ajinomotto.


4. Roll out the dough into long strips, place a little filling as shown in the picture, close it like a long roll sealing the edges.

5. Tie a knot and seal the ends by pressing firmly.

6. Deep fry and serve with chilli garlic sauce
