Pork Belly (Sam gib sal like never before )



Brine Is here


Slice the fat and pierce it with cloves. Cook the fat on a hot pan for 5-10 mins. Put in the oven for 1hr 30 to 2 hr at 180. I placed it on a bed of jujube, pomegranate and Quince.
I glazed it with maple syrupy and brown sugar. I would have liked to use Asian pear juice


Pomegranate Season




"After opening the pomegranate by scoring it with a knife and breaking it open, the arils (seed casings) are separated from the peel and internal white pulp membranes. Separating the red arils is simplified by performing this task in a bowl of water, wherein arils sink and pulp floats. The entire seed is consumed raw, though the watery, tasty aril is the desired part. The taste differs depending on subspecies of pomegranate and its ripeness. The pomegranate juice can be very sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic tannins contained in the aril juice."

Pepero Biscuit cake Something to do with all your Pepero

Replace half the biscuits with pepero
I soaked the Pepero in chocolate liquor .

Safron Rice


Chicken stock
Turmeric
Saffron
Salt and pepper
Mushrooms and onions
Cook the rice in the chicken stock , turmeric and saffron.
A little parsley

Pork steak , fried peppers and onions, Toasted bread and jalapenos . The sauce is the Steak sauce you see in the picture with a mix of mayo. This is the best sandwich of all time.

Joe McPherson From Zen Kimchi wrote this recipe in the Korean herald so I decided to try it out for a dinner party . It was so good everyone wanted more. The recipe was originally inspired by steamykitchen.com. Check it out here

ZenKimchi Marinate
Before cooking marinate them. In a bowl, mix a spoonful of gochujang (red pepper paste), a quarter cup of mirim (rice cooking wine), the juice of a lemon and a half bottle of soju.

I totally had no time for a marinate I was not quite as prepared as I would have liked to be.
To make it easy I cut the the man du wrappers in to strips .Don't forget to slice the intestine pipe out of the back of the shrimp.
Serve with some sweet chili sauce.

Fetta Cheese Pies - (Fatayer bil Jibneh) فطائر بالجبنة


Yields about a dozen or more depending on the size.

Ingredients:
For the dough:
4 cups all purpose flour
1 1/2 cups warm water
1 tablespoon yeast
3/4 of a teaspoon of salt
3 tablespoons of olive oil

for the filling:
About 2 cups of crumbled feta cheese
1/4 cup fresh chopped parsley
1 small chopped onion (or half a big one)

- Mix the filling ingredients and set aside.
Mix all the dough ingredients together, cover and let the dough rest for about an hour in a warm place. Knead once. When it rises, roll the dough and flatten until it's medium thin. with a rounded cookie cutter (or a small drinking glass)cut the dough. Place about a small teaspoon inside each circle then bend the 4 sides and press on each corner to hold together. (Like the photo shows). Bake in a 350F oven for about 25 minutes or until golden on top.
