Recipe of the Week



Vegetarian Meatloaf

Ingredients 
  • 1 (12 ounce) bottle barbeque sauce

  • 1 (12 ounce) package vegetarian burger crumbles

  • 1 green bell pepper, chopped

  • 1/3 cup minced onion

  • 1 clove garlic, minced

  • 1/2 cup soft bread crumbs

  • 3 tablespoons Parmesan cheese

  • 1 egg, beaten

  • 1/4 teaspoon dried thyme

  • 1/4 teaspoon dried basil

  • 1/4 teaspoon parsley flakes

  • salt and pepper to taste

 Directions
  1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.

  2. In a bowl, mix 1/2 the barbeque sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese, and egg. Season with thyme, basil, parsley, salt, and pepper. Transfer to the loaf pan.

  3. Bake 45 minutes in the preheated oven. Pour remaining barbeque sauce over the loaf, and continue baking 15 minutes, or until loaf is set.

In the hanging garden


Yesterday I had a lovely evening with my friends at the Ciutadella Gardens... It was my first time there, and I must say that the place is gorgeous!!




Laia, Vane, Carol, Micky, Cris, Laia Chic, Mario, Javi and I ate lots of things! Chelsea came too, but she had to leave so early... Muffins, sandwiches, cookies, a cake that I made myself... well, I think Cris would show you all we had for eating...

 The moment of the cake was really funny, but we were all full of candy by that time!!


We played card games and saw the dawn... by the time we left the park, it was close night... what a wonderfl day! By the way, this was my outfit!

Back to a routine!!

Don't get me wrong, vacations are great! But there is something about getting back into a routine and schedule that I love as well! The last two week David and I spent in Colorado, exploring as many parks and areas that we could! We had a great time and got some wonderful pictures. After the two day drive home, and eating out at least once a day, I was ready to get back home! I have to say, I missed my own home cooking! haha I think David did too, or at least he says he did when I asked him! :)

So now you know why my blog has been quiet the last couple of weeks! I go back to work on the 16th so I have a couple weeks left of summer break. I think I am actually looking forward to that even! It will be good to see my kids after the summer! 

So I am hoping to find inspiration and more topics to write about this month! I want to start doing my recipe of the week on Sundays too so that if you want to try it that week you can, instead of getting it half way through the week.

Corn Fritters (Perkedel Jagung)

Corn Fritters (Perkedel Jagung)

400g can sweetcorn, drained
1 small red chili, deseeded and finely chopped (optional)
4 green shallots, sliced
1 tsp ground coriander
pinch of salt
1 egg
1/4 cup rice flour
1 tbsp plain flour
vegetable oil for cooking

Combine corn, chili, shallots, coriander, salt, egg and flours. Leave to stand for 30 minutes. Heat oil in a wok or frying pan. Drop spoonfuls of mixture into oil and cook until golden brown.

Serve with chilly sauce.
