Dumaguete's Best-Kept Secret

Last September I visited Dumaguete City for a week---to have a break from all the adages of life. It was my first time to travel by plane alone. Cebu Pacific was on time so I had a very friendly trip. Also with the help of the convenient Terminal 3 Airport, everything went well. I stayed with my very good friend, Pie. She toured me around the city along with her cousin Thirdy. The three of us riding on a motorbike every night was really hell exciting. The city is very small so I guess you will not miss the famous Rizal Blvd, where strips of good restaurants can be found. I also went to different beaches and toured the famous Silliman University. Dumaguete is very interesting and it is also called the city of gentle people. Before I went back to Manila Pie brought me to this store named SANSRIVAL, which is famous for their very special Silvanas. I wish I bought a dozen box instead of just half. So Manilenos out there, don't forget to bring home tons of this when you visit Dumaguete!

The Taco Rule for Leftovers

Cooking for one means I always end up with leftovers. I can eat the same meal twice, maybe three times, but after that I'm done. But this doesn't stop me from making a roast or a brisket or a whole pork tenderloin. The good thing about leftover meat is you can freeze it and when you remember that it's in there, implement the taco rule for leftovers: When unsure about what to do with your leftover meat, make tacos.
I made a brisket last week - 2 lbs of beef braised in red zinfandel wine with onions and carrots. After four meals of brisket with egg noodles, I wrapped the remaining chunk in foil and pitched it into the freezer. I didn't know what I would do with it since the gravy and vegetables were gone. Then I remembered the taco rule. I shredded the meat and fried it lightly. After I heated up my shelf stable corn tortillas (they last forever), I topped my tacos with homemade guacamole, chopped onions and tomatoes, and finished them off with a dollop of non-fat yogurt. Delicious. I could hardly taste the wine flavor.
Whenever I get duck at the supermarket (Maple Leaf Farms has a nice half rotisserie duck in the frozen food section), I use the leftovers to make duck tacos. Need a use for the rest of the rotisserie chicken you bought because it smelled so good in the store? Make chicken tacos. Just because I didn't cook it myself doesn't mean I can't turn it into something homemade. And for some reason, the taco rule for leftovers always turns out better than when I set out to make tacos in the first place.

Eating at a temple

Things You should Know. The monks have a very special way of eating.

It is called Balwoo. Meaning bowls containing a moderate amount.
1- Do not leave any food. Take only moderate amounts . Only what you can eat.
2- save one piece of radish or kimchi till last. This is going to be used for cleaning.
Try to keep your water clean. the water you receive at the beginning should be as clean at the end of the meal.
Wash you hands before the meal.
Do not talk
Turn off your mobile.
Sit straight and quietly
You have Four bowls
One for rice
one for soup
one for water
one for your sides

Try not to make any noise even with your chopsticks.
Always eat with the bowl high up to your mouth. So as not to show your mouth to others
Do not put anything in your rice bowl other then your rice.
After you use the spoon place it in the coup bowl and the chopsticks always rest on the water bowl.
when you hear the bamboo stick you can start.
First time place your hands together
second bow
third sit up
untie the bowls, using only your thumbs remove the bowls place them clockwise
smallest behind the largest, Do not take any extra you must eat everything .
at the end take the water rinse everything and pour in the bucket
Make sure their is no food in there you may have to drink everything in the bucket if there is .
This was the most stressful meal I have ever had.
But the mushrooms that we had were amazing.
Remember monks are vegetarian so I didn't think I was really going to like the food.
But I have to say the food was great.
