Meyer Lemons, Round 3


Budino.  It sounds fancy, but it's not.  I'll bet your mom made it for you back in the day.  It's really nothing more than a "pudding" that bakes up in two layers, one with texture and one with something less than that, which ends up giving you something like a (no brainer) souffle with sauce.  Your mom probably called it "Lemon Pudding Cake." 

You can bake it up in a chocolate version as well (if you need a recipe, let me know).  Even the Buckhead Diner here in Atlanta had it on their dessert menu.

However, in the interest of using up the rest of those Meyer lemons, I baked up a batch of the lemon version last night.

Oh.  My.  It was simple, deceptively light and I ate the whole thing!  (Well, one entire serving, which is much, much more than I will ever allow myself).  My silly iPhone photo doesn't do it justice at all.  Sorry.

Just make it.

MEYER LEMON BUDINO  (or Lemon Sponge Pudding, for the rest of us)

1/4  cup unbleached, all-purpose flour
1 cup granulated sugar
1/4 teaspoon Kosher salt
1 cup whole milk
1/4 cup Meyer lemon juice
2 tablespoons regular lemon juice
2 tablespoons Meyer lemon zest
3 eggs, separated
4 tablespoons unsalted butter, melted


Preheat oven to 35-degrees.  Grease a 2 quart baking dish or 6 individual ramekins.

Stir together flour, sugar and salt in a medium bowl.  In another bowl, whisk milk, lemon juices, lemon zest and egg yolks.  Add melted butter and whisk to blend.  Stir into flour mixture and combine until smooth and well-blended.

Beat egg whites until they hold soft peaks.  Fold gently into flour and egg mixture.  Spoon into prepared baking dish(es). 

Place into a water bath (bain marie) and bake for 40 minutes until puffed and just golden.  Serve warm with whipped cream, if desired.

Yield:  6 servings

Okay, I'm done now with the Meyer lemons.  I promise.  And don't discard this recipe if you can't find them - regular lemons will do just fine.

Listening to... Sian Alice Group.

 You all know that I love music, and I love to find new music too. When I saw Florence + The Machine last week, there was a band who performed before the gorgeous Florence; Sian Alice Group.




Sian Alice Group is an English post-rock band with roots in experimental music and the avant-garde style. Their music is hypnotic, full of ambience sounds and created for listening wuite in your room... but when you see them in concert, you discover a band full of energy and a powerful live sound.



The band is formed by Rupert Clervaux (Drums, Piano), Ben Crook (Guitars) and the lovely Sian Ahern (Voice), one of the most beautiful womens I've ever seen, with a lovely voice!



They've released two albums: 59.59 (2008) and Troubled, Shaken, Etc. (2009). Also they have 3 EPs: Nightsong 7" (2007), Remix 12" (2008) and The Dusk Line EP (2008), wich I consider one of the most beautiful songs I've ever listened.




So, please, give them a try!

Beard Handicapping 2010

The long list of contenders for this year’s James Beard Foundation Awards was whittled down today, when the actual nominees were announced.

Of the 91 names on the list for the chefs and restaurant awards — not counting those in the Best New Restaurant category — 53 were on the list last year, too, which is kind of par for the course.

It’s probably fewer returnees than last year, actually. Most categories usually have three or four of five nominees returning from the previous year — obviously not all five can return because someone has to win and then is ineligible for a number of years.

But this year there was a big shakeup that I don't understand in the Outstanding Wine Service category, in which only Blackberry Farm returned.

The Outstanding Service Award and the regional awards for the Mid-Atlantic, Southwest and Pacific have just two returning nominees.

For the Beard Awards, that’s almost revolutionary.

Still, I shall endeavor to predict the winners.

Mind you, these are not my choices for who I’d like to win. They are who I think will win based on how popular they seem to be with media.

Because although anyone can participate online in the process of picking semifinalists, the judges in the two rounds of voting required to pick the actual nominees and the winners are former winners and the food writers who made them popular in the first place. It’s kind of an insular world, and people tend to feed off of one-another’s opinions.

That being said, my predictions don’t have a great record. This will be my fourth year of Beard Handicapping. The first two years I guessed 7 out of 19. Last year I got 8 out of 19. So, that’s less than half, but quite a bit better than a monkey picking at random (and if you think about it like baseball, I batted .421 last year).

Now let’s get on with the predictions, shall we?

Outstanding Chef:
We have Andrés, Colicchio and Goin returning from last year. Both of the newcomers are from San Francisco and I think they’ll split that city's vote. The question is, are the judges tired of Tom Colicchio or worried that José Andrés is too creative for these serious times? If so, they’ll express love for the homey food of Sunday dinner at Lucques and vote for Suzanne Goin.
But I think star power will prevail and Tom Colicchio will win.

Outstanding Restaurant:
Babbo, Boulevard and Highlands Bar & Grill are back from last year, but the newcomers, Daniel and Spiaggia, are hardly new.
It’s never wise to predict against a victory for Mario Batali or Daniel Boulud. We’re in the mood for classics this year, which means Spiaggia has a good chance. But I think I’ll predict Daniel.

Outstanding Restaurateur:
These are all the same guys as last year except for Pat Kuleto, who’s replacing last year’s winner, Drew Nieporent. Will judges feel bad about not picking Boulevard as outstanding restaurant and vote for its owner, Kuleto, for restaurateur? I’m thinking they won’t. Keith McNally is not particularly press-friendly, which could hurt him or help him depending on whether food writers like restaurateurs who play hard to get. I think mostly they don’t like that.
I’ll predict Richard Melman.

Outstanding Service:
Oh who knows? La Grenouille and Vetri are back from last year. The rest are new. Robuchon’s Las Vegas restaurant is up for three awards this year (service, the regional award for the Southwest and pastry chef). But I think Grant Achatz’s star power will outshine it. I think Alinea will win.

Best New Restaurant:
This category actually kind of matters, because you only have one chance to win it. I suppose it’s possible that Marea and Locanda Verde will split the New York vote, except Flour + Water, Frances and RN74 are all in San Francisco. Does that mean Biboou in Philadelphia will slip through like a beta salmon while the big fish duke it out?
Maybe, but I think Marea will win.

Kamel Guechida, Nicole Plue and Mindy Segal are all back. I predicted that Mindy Segal would win last year, and I’m going to predict it again.

Rising Star:
This award, given to a chef aged 30 or younger, is important because it can really help launch a career. Johnny Monis, Gabriel Rucker and Sue Zemanick are all back from last year. Tim Hollingsworth doesn’t really need to have his career launched as he’s already chef de cuisine at The French Laundry, but we love the House of Keller (Hollingsworth's predecessor, Corey Lee, won this award), and I predict he will win.

Paul Grieco of Hearth in New York is the only newcomer here. He could win, but I think we’re going to go with booze this year, so I predict Julian P. Van Winkle, III of Old Rip Van Winkle Distillery in Louisville, Ky., will win.

Michael Carlson of Schwa is the only newcomer, replacing Michael Symon who won last year. People like Schwa’s homey style, but I hear so much buzz about Paul Kahan’s restaurants that I think Koren Grieveson, his chef at Avec, will win.

Daniel Humm and Michael White are both new in this category, and they’re both super-white hot. Woe unto he (or she) who dares to tilt at that mighty windmill.

Interestingly, two of the nominees here, newcomer (to this list) Andrea Reusing of Lantern, and Bill Smith of Crook’s Corner, are from Chapel Hill, N.C. Linton Hopkins of Restaurant Eugene is the sole representative from Atlanta. Hugh Acheson is from Five and Ten in Athens, Ga., and Sean Brock, the other newcomer, is from McCrady’s in Charleston, S.C.
Sean actually isn’t a newcomer as he was nominated to be rising star last year, but you can only be on that list for so long. I think he’ll win the regional award this year.

South:
Scott Boswell of Stella! in New Orleans and Christopher Hastings of Hot and Hot Fish Club in Birmingham, Ala., are new to the list, although really it’s more that Chris Hastings was just given the year off in 2009. He was nominated in 2007 and 2008.
Is the third time a charm? Mmm, I think it’s a toss-up between him and Zach Bell, who’s Daniel Boulud’s chef in Palm Beach.
As I said, it’s always dangerous to bet against mighty Daniel, but one must occasionally live dangerously.

Southwest:
Ryan Hardy of Montagna at The Little Nell in Aspen and Claude Le Tohic from Robuchon’s restaurant in Vegas are back from last year. You’d think Robuchon would win something, but I’ve been hearing a lot from Rick Moonen’s people lately, and not just because he’s on top Chef Masters, after years of relative quiet. I think it’s his year.

I would love for Jeremy Fox to win since he’s since left his job at Ubuntu, for which he was nominated last year as well as this year. It would be a tad awkward. David Kinch of Manresa is also back. Quince, Michael Tusk’s restaurant, I think has the admiration of the Bay Area crowd, but Matt Molina of Mozza has celebrity chefs at his back.

Naomi Pomeroy of Beast in Portland and Andy Ricker of Pok Pok, also in Portland, are the newcomers in this category. Together with Cathy Whims of Nostrana in Portland, that means they have three nominees, and Seattle has just two. How embarrassing.
One of them might win, but I think the award will go to Jason Wilson of Crush in Seattle.

Hello hello hello...
Heran enggak, hari pertama UN gue masih sempet update sana sini?
jangan heran!
Gue enggak betah beransos. Nah kali ini gue agak lengang (red. ga tau belajar apa).

UN Hari PERTAMA

well, bisa dibilang UN hari ini luancaaaar banget!
Alhamdulillah.
Apalagi tadi yang ngawas ruang gue baik-baik banget.
Belum lagi, guru rokris dari SMP gue ngawas ruang gue, Bu Donna Rajagukguk.
Dan karena hari pertama digeber dua pelajaran, selang istirahat satu jam, sekolah membagikan subsidi bbm gratis.
Ayam  bakar ++, nasi, dan bihun, serta puding.
Ada yang KURANG! bukan kurang banyak atau kurang jumlahnya.
KURANG SAMBEL BUNG! aih hambar banget jadinya.
tapi jujur, pudingnya asiiiik banget. gue dapet yg rasa stroberi dooong :P.
Pas pulang, panas terik bak panggangan manusia, jadilah gue lemes sejadi-jadinya. Yummy. 
GUE SEDIH MELEWATKAN COBRA STARSHIP

Demi Ujian Nasional bin keparat ini, gue hars membiarkan suami gue konser tanpa didampingi gue yang tercinta ini. Preeeet!
Gue sebelumnya mau berterima kasih sama Om Adrie Subono yang telah mendatangkan dan mengenalkan Indonesia ke band terfavorite abad ini *versi gue* Cobra Starship.
Sekalipun kelangsungan konsernya bertepatan dengan Ujian Nasional yang telah berhasil memenjarakan gue.
Tadinya gue nekat mau dateng selama pelajaran UN di hari Rabu, alias keesokan harinya, enggak mencekik.
Nyatanya Tuhan berkata lain,hari Rabu justru MATEMATIKshit! walhasil, niat nekat kumat gue itu terkubur tanpa melahirkan didalamnya.
Ironis. hiks hiks hiks.
Jujur, gue nangis karena harus kelewatan kehadiran mereka untuk pertama kalinya.
Bahkan gue bersedia menukar konser Boys Like Girls dengan Cobra, seandainya bisa...

Menyedihkaaaan...
Apalagi pas gue minta Daud Tobing, si penyiar kondang asal radio kribo itu untuk membbmkan gue apa saja. Terumtama gue minta voice note, dan belum bisa dijanjikan.
Gue bener-bener sedih.
Kenapa harus ujian nasional yang menghambat persuaan gue dengan suami gue. (ngayal terus)

Nyolotnya lagi, abang gue berhasil pamer dengan manisnya foto bersama Suares si personil Cobra Starship.
Ah so shit!

Tuhaaaaaaaan, beri lah hamba-Mu yang manis nan lucu ini (hueks) ketabahan, kelancaran dalam mengerjakan UN, dalam berkreativitas, dan dalam materi. Amin.

Cooking 5 Pumpkin Cookie

Bener kata LC, PR nya suah, buat gw susahnya si pas dicetaknya aja soalnya tuh adonan lengket banget2 padahal uda gw kulkasin mpe 5 jam plus 1/2 jam di frisher masih aja lengket...aneh dah.

Resepnya diambil dari link ini. Terjemahannya gw tulisin lagi ya.
bhn

50 gr pumpkin
100 gr tepung trigu diayak
2 sdm mentega
2 sdm gula
1 bh telur

cara
1. Kupas kulit pumpkin, potong kotak2.
Panaskan dalam microwave selama 1 mnit, keluarkan
lalu hancurkan. Ato, kukus kabocha hingga lunak, hancurkan
sisihkan

2. hancurkan mentega tambah gula aduk rata

3. lalu masukkan telur, aduk rata

4. masukan adonan pumpkin ke adonan 3, campur rata,
lalu masukkan tepung, aduk rata

5. campur jadi satu, bentuk bulatan, lalu bungkus plastik, masukkan
kulkas, diamkan selama 1 jam biar mengembang.

6. kluarkan adonan, pipihkan setebal 7 mm, lalu bentuk dengan cetakan

7. oven 180 drajat selama 10 mnit, kluarkan lalu dinginkan.


Experience pertama bikin, gw tambahin lagi tuh tepungnya, makin lama makin banyakkk...maksudnya si biar ga lengket, hasilnya emang bisa dicetak, tapiiii kerasnya ngalahin batu..terpaksa gw buang dah..sayang banget si...

Experience kedua, uda ngikutin petunjuk Liza, kulkasin biar lamaan, hasilnya tetep aja lengket, hopeless banget dah gw. Gimana ngebentuknya??? Mikir punya mikir, gw pake aja tube buat icing cream..haha, hasilnya?? Mei bilang ma kok kayak unchi bulet2 gitu??

Pas di oven, hasilnya tetep aja bulet2 ga berbentuk?? hahha..susahhhh, penasaran juga, gimana supaya ga lengket, biar gampang dicetak ya??
Rasa cookienya si enak, luarnya emang keras, tapi begitu masuk mulut, ternyata dalamnya lunak..waktu kelar oven, wangi kabocha nya merebak bangettt...wangiiiii

Sotsuen shiki no party

Kita adain party buat merayain kelulusan mei dari kindergarden, so ngundang mertua n ipar ke rumah. Kali ini kita yang masak, gw masak 3 macem, laki gw masak 2 macem n potong sashimi. Kita nyiapin bbq juga, bikin mochi gohan-nasi ketan, salad, paprika daging, lumpia, terong apa lah ga tau namanya ama pizza. Kenyang nyaaa mpe malam ga makan lagi da gw

Hubby jemput ortunya sekitar jam 11an, n ipar gw beliin anak2 karangan bunga..mereka kesenengan banget, pegang bunga sambil joget2...hahha..lucu juga..sayang gw ga fotoin..

Ini foto2 makanannyaaa...jangan ngiler ya...soalnya uda abis, sebagian dibungkus buat mertua haha.
