Yellow Rise (Nasi Kuning)

Yellow Rise (Nasi Kuning)

Ingredients & spices

1 (2-inch) piece lemon grass
1 cup uncooked regular rice
1/2 teaspoon salt
1/4 teaspoon ground turmeric
2 cups coconut milk

How to prepare:

Heat all ingredients to boiling in saucepan, stirring once or twice; reduce heat. Cover and simmer 14 minutes, without lifting cover or stirring. Remove from heat.

Fluff rice lightly with fork; cover and let steam 5 to 10 minutes. Remove lemon grass.

Yellow rice can be served with many main dishes, Grilled Chicken Breast is one of them.

4 boneless, skinless chicken breast halves

1/2 cup fresh-squeezed orange juice
1/4 cup peanut butter
2 cloves garlic, minced
2 teaspoons best quality curry powder
1/4 cup shredded coconut

1 medium red bell pepper, cut in half

Make a marinade out of the first 5 ingredients. Pour it over the chicken and refrigerate for several hours, turning it occasionally to make sure every part of the chicken is coated.

Heat the grill and remove the chicken from the marinade. Grill the chicken and the bell pepper for about 15 minutes, using the leftover marinade as you do so.

To serve, cut chicken and the pepper diagonally into 1-inch slices.

You can prepare this recipe with whole chicken breasts too. The advantage of the whole ones is that they have more flavor. The advantage of the boneless is that they are lower in fat.

1/4 cup salty soy sauce
1/4 cup lime or lemon juice

How to prepare:

Cut spareribs into serving-size pieces. Place on rack in shallow pan. Combine remaining ingredients, mixing well. Spoon or brush sauce over ribs to coat all sides.

Bake at 325 degrees F for 1 1/2 hours or until ribs are tender and browned, basting with sauce several times.

Pranna's new chef

New York, say hello to Keith Kornfeld, the new chef at Pranna.

Keith, a New Orleans native, comes fresh off of a stage at Namh, a Michelin-starred Thai restaurant in London, where he studied under renowned Thai chef David Thompson (Thompson's actually Australian, but he is perhaps the world's greatest chef of Thai cuisine nonetheless — at least that's his reputation, I've never eaten his food myself, but I met him at the Beard awards a few years back and he seemed like a nice guy).

Before his ten-day stint at Namh, Keith was chef of The Outrigger on the Lagoon in Fiji, and he also has worked in both Bangkok and Phuket in Thailand.

Keith has high aspirations for Pranna, which is good, both because Pranna's owners have high aspirations for it and because this city could use some more good Southeast Asian food (although last week my friend Andy Battaglia and I did have some top-notch food at Betel -- of course they knew I was a food writer and that obviously could color the experience, as you know).

Pranna's a bit hamstrung when it comes to culinary aspirations by the fact that it looks and feels like a club. Are its guests looking for great Southeast Asian and South Asian food? Would they know it if they saw it? Is it condescending of me to ask (of course it is, but that doesn't mean I'm wrong)?

You might recall that back in February I met the restaurant's bar manager, Eric Greczel, who shared his plans to turn Pranna's basement into a high-end cocktail bar.

I've been a bad journalist and haven't followed up to see if those plans came about. If you have, well, why don't you tell me about it by commenting below?

In the meantime, best of luck to Keith Kornfeld and the whole Pranna team.

(Keith is not, by the way, related to my cousins, the Wichita-Denver Kornfelds, in case you were wondering).

San Gimignano

So, where were we? Oh yes, Poggibonsi was our next stop and from there we had to get a bus to take us through the Tuscany hillside to the 10th century village of San Gimignano. The bus ride in and of itself was totally worth it, but it just kept getting better and better!


Tuscany vineyards...never thought I'd see this!




The village was big. The main streets were crowded, but we could get lost all by ourselves everywhere else. It was so neat!






So artistic! I love arches and wood doors.


Wow! The alabaster was amazing! I really wanted to bring one of these globes home, but couldn't figure out how to carry it.
A couple years ago, when our family played music as a band, I wrote a song about Mary's alabaster box. When I found one small enough to carry for the rest of our trip, I promptly bought it!



We didn't climb this tower, though, no doubt, we would have if given the option! :D


It looks like the village well is still a popular hang out spot.


Can you believe this is 11 centuries old??!!




I don't know what they called it there, but this wisteria was gorgeous! It was just outside a small arbor and we could hear Italian music coming from within.


These guys were so fun and I loved listening to them. I wanted to buy some Italian music, so I asked if they had an album. They didn't, but they sung a song just for us - in English. :D



It was time to move on to Siena. Once there, we decided to walk to Ostello di Guidoriccio. (Don't ask me how to pronounce that! I heard the man behind the counter say it a total of once and he basically said not even to try. :D)
Walking is wonderful, I love walking...however, it took us forever - going up hill all the way, seriously! - to reach the hostel. I'd recommend a bus to anyone who goes to Siena...I think. :P Problem with the buses there, is that they are never there when you are there, so we never used them. I sure wanted to though!

We got a well priced room for the 2 of us and, being "affamato!" (totally famished!:P) we found a coop where we bought fresh mozzarella, tomatoes, antipasto and basil to eat with pizza. Never mind utensils, we made the salad in a bag and ate it with our fingers. Messy, but oh so yummy!

One great story today was that our roommate in Manarola met us again at this hostel AND, she brought our battery charger for the camera with her! (I dare not tell you which one of us left it! :D) That was a huge blessing!

Leaning Tower of Pisa

We left our hostel early to meet a couple guys from Alaska for breakfast. (Anna failed to mention in the last post that we met one of them, Dan, while we were trying our "Zuppa Pecse" for dinner. We hung out a bit afterwards - until we suddenly remembered that our hostel had a curfew. Thankfully, we weren't left sleeping in the streets. :P)


Manarola is a quiet little town, and nothing was really open there, so we walked to Riomaggiore...and there wasn't really anything open there either. So, we grabbed a couple pastries, some chocolate and a not-so-good lemon drink and wiped the rain off some outside chairs on a patio. We chatted away about travel experiences and such until Anna and I had to leave for our train to Pisa.

This is the day we left open on our itinerary...until yesterday, when we decided we would see the Leaning Tower and San Gimignano before arriving in Siena to perhaps get a room in the only hostel there. That sounds brave and adventurous, huh?! Well, we just couldn't choose between the three options!
Our train tickets for this leg were pretty complicated - lots of train changes, but we made it to Pisa in no time and trekked straight over to the Tower on foot. Pisa, itself, wasn't super impressive, but the tower obviously was - it was sooooo crowded!

We snapped some pictures, looked around a bit and headed back to the station to catch our next train to Poggibonsi. Poggibonsi...don't you just love that name?!




First things first though - gelato! Our goal, after all, was to have gelato everyday while in Italy. It's just not everyday that you can get real Italian gelato!




Back at the station. That was an exhausting walk...
