Lobster Corn Chowder





Chowder is one of my favorite hearty meals to warm up a cold day.  Of course, any recipe that starts with rendering bacon is good in my book, but chowder fits the bill to drive away the winter's winds.  However, sometimes a less hearty alternative is inspired, either for something more delicate, or through ingredients more refined.  I have whole cookbooks of traditional chowders, but some years back I clipped this recipe from Wine Spectator for a lighter alternative.  I finally tried it last weekend and enjoyed it greatly, although lost on the kids was my fancy tableside pouring.  At least I pretended to be taken away to a fine restaurant...  Try it and tell me if you like it.  Serves 2.

Ingredients:
3 tbsp butter
2 1/2 cups leeks, white parts finely chopped
3 cups potatoes, peeled and diced
1 cup onions
salt/pepper
2 cups corn kernels
1 cup heavy whipping cream
3 cups light fish stock (fumet)
4 sprigs each tarragon and thyme, tied into a bundle
1/4 lb chanterelle mushrooms
1/2 lb cooked lobster meat, cut into chunks
1 tbsp fresh chives, finely chopped

Directions:
Start the soup by melting 2 tbsp butter in a heavy saucepan.  Add 2 cups leeks, 2 cups potatoes, onions and salt.  Cook over low heat for 10 minutes.  Add the corn kernels and cook 2 munites.  Add the cream, bring to a simmer.  Add the stock and herbs, season, and simmer until the potatoes are very tender, up to 20 minutes.  Remove the herbs, and blend with a handheld blender or in batches in a food processor, pureeing until smooth.  Cover and let stand until ready to serve.
For the garnish, melt 1 tbsp butter over medim-low heat in a large sautee pan.  Add potatoes and soften for 5 minutes.  Add the chanterelles and saute for 2 minutes.  Add the leaks and a pinch of salt and soften, 2 to 3 minutes.  Add the lobster meat and the remaining stock.  Cover to warm the lobster and further soften the potatoes a few minutes.  Remove from heat, add the chives. 
Bring the soup back to a boil.  Divide the garnish evenly between bowls and ladle the soup over the garnish.  Serve with a chardonnay.

Type 2 Diabetes and Insulin Treatment

New research suggests that treating type 2 diabetes with insulin therapy + metformin improves outcomes when compared to the traditional exercise, weight loss, and oral hypoglycemic agent drugs when needed. Three years into a 6-year study at the University of Texas’s Southwestern Medical Center, results showed that the insulin-treated group had fewer hypoglycemic episodes, gained less weight, and reported high treatment satisfaction [1].

While an abundance of my patients state that they will never take shots, I found this research interesting. As a clinician, I am deeply concerned about hypoglycemic episodes for patients on insulin regimens. Without the fundamental understanding of carbohydrates, carbohydrate counting, and insulin dosing, insulin therapy can open flood gates of displeasures and dangers. This research, however, recommends a sliding-scale of insulin dosing which is determined based on blood sugar readings [1].

Interestingly, the International Diabetes Foundation states that 3.8 million people will die from diabetes and related illnesses each year. With the number of diabetics growing from 20 million to 246 million in the past 20 years, diabetes is without a doubt a growing disease state among the US and other countries. The highest increases in diabetes cases are occurring in developing worlds, such as India (40.9 million) and China (39.8 million) [1]. I would’ve never guessed.

Yesterday's diabetic diet went like this...


Breakfast:
2 whole wheat waffles (2 carbs)
2 Tbsp apple butter (1 carb)
cappuccino with 2 Tbsp sugar-free International Delight (0 carbs)
     Total: 3 carbs


Lunch:
1 serving chili (1 carb)
6 wheat crackers (1 carb)
1 small apple (1 carb)
8 oz. V8 Fusion Light (1 carb)
     Total: 4 carbs


Dinner:
1 cup mini shredded wheats (2 1/2 carbs)
1 cup skim milk (1 carb)
     Total: 3 1/2 carbs


Snack:
1 small banana (1 carb)

1 cup skim milk (1 carb)
     Total: 2 carbs

Accident!


Hello to everyone!


It's been a pretty long weekend, I'm sorry not writing sooner ... but will see ... Saturday, I had a little accident!

It all started in the morning, I was having lunch with Rocio and Esther and walking around the city. I made a few purchases and then at night we dined at a place called "The Black Cat," fantastic, with Micky and Rafa. We went then to drink a drink called "panther milk" made from vodka, gin, milk and grenadine, and then we were in a dive called "Casa Manolo", very strange.

When we left there, had watered the streets ... and my bad luck, I stumbled and fell ... "I hurt my ankle! So on Sunday he could not walk. Luckily I am a tough girl and I can work at the "Salón del Manga", which is this weekend and attend the Tea Party of the mark Baby, the stars shine bright.


Today we were in the middle just look for the latest accessories for the party ... We are all very excited! Just over a day is great!

Well, now I think I'm going to sleep... tomorrow it's gonna be a long day... and the day after tomorrow... yaw! Everything will start!!

Sedikit bercerita, sekarang gue kelas 12, tandanya sebentar lagi akan menghadapi ujian kelulusan dan tes masuk perguruan tinggi.
Percayalah, sekolah laknat yang mendidik saya saat ini menyita waktu, tenaga, dan kebahagiaan saya.
Sepanjang sejarah persekolahan saya, baru kali ini rasanya hilang semangat ke sekolah. ckck.
