Things That Make Me Smile

Star Trek: The Original Series. Is there anything better?

Ready to Rock-n-Roll....

This time tomorrow Jeremy and I will be recovering from the Rock-n-Roll half Marathon. This morning we woke up really early to go volunteer at Luke's Spring Classic 5k/10k. The running group I coach ran in the race this morning. They did really good too!! After the race we headed over to the expo to pick up our race packet for tomorrow.

We have been training hard over the last few months preparing for this race! This will be my third half and Jeremy's second. Back in December he ran the marathon instead of the half. Every Saturday we get up and meet our running groups with Luke's Locker. I cannot even express how much we LOVE their training program. It's very organized and gets you very prepared for a race. Not only is it fun, but you meet lots of new friends too!! I'll try to post our results after the race tomorrow.

MIMPI SEMALAM

oh ye, semalam mimpi macam dalam gambar ni. i mean, mimpi ada banyak sangat ikan datang dekat. ikan dekat sawa padi, lepas tu tengah jalan tu, habis sawah padi, bawa ke tepi sungai yg bersambung dengan pantai. cantiknya view, masya Allah. tapi ikan tu semua ikut sepanjang jalan, banyak ikan tak berhenti datang dekat. tanya abah, apa maksud dia? abah cakap kalau ikan, sawah, pantai sungai tu kan semua benda luas, benda baik, mungkin ada rezeki baik. harapnya, insya Allah :)

well. Alhamdulilah. again.

but maybe i have to say no to TV3.
sebab kontrak at least 7 months, then sambung permanent. but bila kira-kira, kalau bulan 9 dapat sambung belajar, tak lepas lah. so maybe let go :(

It's Getting Hard To Be Outraged

Here's a quote from our President from the Organizing for America website. It's part of an interview he did in El Salvador about Libya.
"And that’s why building this international coalition has been so important because it means that the United States is not bearing all the cost. It means that we have confidence that we are not going in alone, and it is our military that is being volunteered by others to carry out missions that are important not only to us, but are important internationally."
Emphasis mine.

I'm not sure if there's anything left to say any more. Which angle do you take with this? The naievete? The incompetence? The gullibility? The ignorance? The smug and smarmy moral superiority?

Obama needs to be the head of the UN. Seriously. Get him out of here and put him in a spot where he can pontificate and preen and pose, where he can live in his land of make-believe that he's actually accomplishing something with his vapid speeches.

Bonus point: Given that China and Russian do not have our best interests at heart, why did they abstain from voting on the UN resolution about the no-fly zone? Could it be that their geopolitical strategists are better than Obama's and they saw this as a disaster in the making?

Dodol (Glutinous Rice Traditional Candy)

Dodol (Glutinous Rice Traditional Candy)

750 glutinous rice flour
10 large coconuts
2 ½ kg coconut jaggery
2 tbsp sugar
Salt to taste
200 gm cashew nuts, chopped

Grate coconuts and extract coconut milk. To do this, grind the coconut with warm water. Strain this, squeezing the coconut as much as possible to extract the maximum amount of liquid. Discard the coconut leaving only the coconut milk.
Chop the cashew nuts and jaggery.

Sieve the rice flour. Add to the coconut milk. Stir well to avoid lumps.
Place on a slow fire and stir continuously in a deep pan.

After the mixture thickens slightly, add the chopped jaggery and stir. After about 5 minutes, add the chopped nuts.
Keep on stirring till the whole mixture is well thickened and begins to leave the sides of the vessel.

Pour into a greased dish. Leave to cool.
Cut and serve.

I have always thought that using the "healthy grains" would result in inferior baked goods..ie: rubber..

But on a diet that shuns wheat, sugar and fat,  I thought I would try an experiment.

Here  is the result ..gluten free, fat free, high protein pancakes that are every bit as good as the "real" deal! No kidding!



Sift together dry ingredients:

5 Tablespoon powdered buttermilk..I used Organic Valley buttermilk blend which is a blend of buttermilk and skim milk 3T =110 calories and 1 gm of fat. Powdered low fat buttermilk will work too

1/2 Cup Organic whole grain quinoa flour from Bob's Red Mill

1/2 Cup Organic millet flour Arrowhead Mills

2 teaspoon Baking powder

1teaspoon salt



Mix together wet ingredients:
 2 large egg whites
one Cup of cooked quinoa
 half Cup Applesauce..( I used Organic applesauce by Eden..no sugar just apples ) 1
 Tablespoon of agave syrup (if you want to leave out the syrup you can)


Alternate adding the dry mixture to the wet and moisten as needed with water..I used 1/4 cup water total but you need to look at it and see if you need a bit more or a bit less..you want a thickish batter..experiment..if it is really thick it will rise up to make a fluffy pancake and if thin it will be more crepe-like

Place a cast iron skillet or non-stick pan over medium high heat Drizzle in a thin coating of oil..I actually use a tasteless olive oil for this..

Spread batter and wait until it is nicely browned before attempting to flip the cake..go gingerly on this til you get the knack as these cakes are a bit more delicate than wheat cakes but they will definitely hold together well.  Using a metal spatula and just a modicum of care will do the trick.







And Voila!! You have a fat free gluten free delicious pancake

This recipe is a starting point..you could add fruit or nuts to the batter..or serve with fruit on the side..also you could add flavorings..cinnamon, vanilla, nutmeg.. Use agave syrup instead of maple if you are watching your glycemic levels. Try changing out the applesauce for pureed banana.
