NIRAMISH OR PRASHADI MANGSHO (MUTTON CURRY WITHOUT ONION AND GARLIC)


I had seen this meat recipe in the blog of Ushnish Ghosh - COOKING AND RECIPES
He is an Engineer by profession and has many hobbies. One of them is cooking. He loves to try out various dishes from different cuisines. Do visit his blog.

(The name of the dish is bit deceptive, it actually means, meat cooked without onion and garlic. When an animal is sacrificed in front of Goddess Kali or Durga, or in the name of any deity, it becomes Prasad and therefore onion and garlic can't be used. Nowadays animal sacrifice is not seen any more in most of the places. But in many parts of the Himalayas it continues, particularly during Navaratra.)

The explanation given by him about this particular dish made it more interesting and I had ever since been wanting to try this one out. It came out quite good and I found it somewhat similar to Elaichi Chicken ( Sindhi )

Ingredients:
Mutton .... 500 gms
Potatoes ... 2-3
Ginger ..... 1 tsp
Turmeric .. 1 tsp
Curd ........ 2 tbsp
Sugar ......2 tsp ( I used only 1 )
Green chillies ... 3-4
Green cardamoms .. 13
Bay leaf ... 1
Black pepper ... 8 ( optional)
Mustard oil .. 2 tsp ( for marination)
Ghee/clarified butter ... 3 tbsp
Salt ... to taste

Method:
1. Marinate the mutton in turmeric and mustard oil ( raw) for 15 minutes
2.Grind cardamoms along with the peel and keep 1/2 tsp aside.
3.Chop ginger and green chili and grind to a fine paste. Add Curd, coriander powder, cardamom powder and whisk to a smooth mix.
4. Mix the paste with the meat and leave for 1 hr.
5. In a thick bottom pan or pressure cooker , heat the ghee and give seasoning of 1 bay leaf and black pepper.
6. Add the potato and stir fry for 3-4 minutes.
7. Add the marinated mutton, salt and sugar, heat with stirring, for 3 - 4 minutes.
8 Add 2 cups of water. It will be of thin consistency and bit runny. .
9. Pressure cook, after 2 whistle, remove the potatoes and close the cooker. Cook for 7-8 whistles or until the meat is cooked.
Cool down the cooker, open and mix the 1/2 tsp cardamom powder and cover.

handwriting...

I've been doing a lot of writing lately.  After my wonderful Bali experience, there seem to be an awful lot of first sentences for novels or short stories floating around on bits of paper, banged out in a random word document when the computer's up and running or typed haphazardly on the iPad if that's the closest thing to hand.
One thing I have been trying to do is my morning pages...three pages of handwritten stream of consciousness. Oh the drivel that sometimes comes out of the end of a pen onto lined paper in the early hours of the morning is something to behold. Or perhaps not :)
I use one of these lovely Christina Re journals that I won on Louise's blog
But it makes me think about handwriting. I like to write, provided I have the right pen. A fine nibbed ballpoint is the weapon of choice for me. Cheap pens from hotels I've stayed in seem to be the best for some bizarre reason. And my handwriting is not too shabby. Not fancy or anything. No clever embellishments, no swirls and twirls. But when I'm 'in the flow or the zone' or whatever it is, my writing looks pretty good. It too is fluid, languid, easy to do, and easy on the eye. I can also do a reasonable imitation of a type font when I put my mind to it. But that requires a different pen...and a whole lot more time!
But when I'm in a hurry or my thoughts are jagged, my writing takes that form on as well. Do you find that? Or is the art of handwriting just dead and buried, used only for shopping lists or by very well mannered people who write thank you notes? I hope not. There's such pleasure in reading something that's been lovingly written don't you think. 
I will leave you with the words of Norbet Platt...I don't know who he is or was.. not even google helped me with that..but I stumbled upon this quote yesterday and I like what he says. I think my morning pages are doing this for me.


"The act of putting pen to paper encourages pause for thought, this in turn makes us think more deeply about life, which helps us regain our equilibrium."


And speaking of equilibrium, thank you to everyone who left a comment, emailed or facebooked after my last post...you're very kind you lot. And while the zen may not be completely back it's certainly getting there. Some balance has been regained. And that's a very good thing. The top ten might even make it back next week at this rate :)

Wow,  Its been some many months since my last update in this blog.
SO many things happen along the way, life have been hitting hard. But even so, I choice to see it as a test to prove that I'm really Up for what I believe in.

 Success is protected behind a great big WALL, why you ask?
The wall is not to stop us from getting in.. but to protect us from success.
What i mean is, Success is a very powerful entity, and Many has fallen when acquiring success without much resistance.. for example, A person who won the lottery, or the child with a golden spoon.

 They got what wanted easy, and most of the time, its also lost that easily too. Compared to those who fought hard to get to where they want to in life. They gain valuable experience and the will-power to fight on, (Building muscle) to handle Success.

 Many stories we hear of success and how great it is... But sadly we don't hear much about the curse or Success. The Fact that One Must be Strong enough to handle Success and use it for the benefits of MANKIND. and for those who are not prepared, but gain Success.... crumble and fall to its awesome power.. hence learning to fear success...

what Am I saying? Are we to Fear Success??
 NO!!
  We are all Success-full in our own right, thats why we are able to be born. What i am saying is, we need to build our Muscles, of life (experience and will power) to be able to get pass the WALL and claim OUT SUCCESS towards LIFE.

MANGO KULFI



Ingredients:
Milk Powder (full cream) .... 3 tbsps
Water ............................. 3 cups
Sugar ............................ 2 tbsp (check the sweetness of the mango and adjust accordingly)
Mango pulp ................. 1/3 cup

Method:
1. Mix the milk powder in water and boil it. Add sugar and keep stirring until it is thick to the consistency of rabri.
2. Let it cool. Add the mango pulp and whisk it until blended.
3. Pour into kulfi moulds and freeze.

Serve with mango pieces.
