HARE BHARE BAIGAN


Ingredients:
Brinjals .. 8-10 ( small variety)
Coriander powder .... 1 tsp.
Turmeric powder ..... 1/4 tsp.
Salt ......... to taste
Oil

For Green Masala

Coriander Leaves.....1 cup
Mint leaves ........... 1/2 cup
Green Chillies........2-3
Onions................1 chopped
Tomatoes...........1 chopped
Garlic.................7 to 8 cloves
Ginger ...............1 inch piece
(Grind the above ingredients to make the green masala.)

Method:

1. Wash and slit the brinjals leaving the stem intact. Soak them in salt water.
2. In a pan add a little oil and shallow fry the brinjals on medium flame and simmer until half done. Remove and set aside.
3. In the same pan heat a little oil and add the green masala paste. Add the salt, turmeric powder and coriander powder.
4. Put the fried brinjals. Add half cup water and simmer to cook. If you need more gravy to serve with rice, add 1 cup water

Cirque audition - not this round




Well, I didn't make it this time around.  It was a great experience and I learned a lot.  The talent scout said that I was holding too much tension, and ya, he was right, I could feel myself doing it but just could not correct it.  

The competition was crazy.  Everyone was super funny and and had absolutely amazing characters!  There were 30 people there and about 10 of us got cut in the first round.  There were a few people that did not even get to do their 2 min solo.  This poor girl, it was her second time and she didn't even get to do her act.  That is rough. 

You know, now that I think of it, that was my first audition ever!  Most of the people there were definitely seasoned audition pros - I did not stand a chance this round.  But I am a fast learner and will do much better in round 2.  

The scout was a super nice guy and told me to keep working and sending him stuff.  

And as I said before, I am not that fussed.  Back to Vancouver Island  - no problem.  Keep working.

MIRCHI KA SALAN ( Hyderabadi)


Ingredients:
Big green chillies - 4-5
Turmeric powder ... 1/4 tsp.
Salt
Oil

For Dry Masala:
Sesame seeds ..... 1 tsp
poppy seeds ........ 1 tsp
Peanuts ............... 1 tbsp
Kalonji ................ 1 tbsp.
Dry red chillies .. 1
Cloves ................. 2
Cardamoms ...... 2-3
Cumin seeds ..... 1 tsp
Cinnamon ........ 1 small piece
Saunf ............... 1/2 tsp
Dry dessicated coconut ... 1 tbsp

(Dry roast and grind the above ingredients, If you don't have dry coconut, you can add fresh coconut to the wet masala given below)

Wet Masala:
Onions ......... 1
Tomato ....... 1
Green chillies .. 1
Coriander leaves ... 1 tbsp
Garlic .................. 5-6 cloves
Ginger .................. small piece
Tamarind ......... size of a small lime
Yogurt ............. 1-2 tbsp

( Grind the above without adding any water)

For Tempering:
Mustard seeds ... 1 tsp
Asafoetida ........... a pinch
Curry leaves

Method:
1. Wash and cut the green chillies into big pieces.
2. Heat oil and fry the chillies for a minute until half done.
3. In a pan heat a little oil and add the tempering ingredients.
4. When they crackle, add the wet masala and saute it for 1-2 minutes on medium flame. Add salt and turmeric powder.
5. Now add the dry masala and the green chillies. Mix it and add about 1 cup water and simmer to cook. If you need more gravy add water accordingly.
6. This is usually served with Biriyani. It goes well with Jowar ki roti also.
