Buntil (Cassava wrap in coconut sauce)

Buntil Stuffing Ingredients :
Grated coconut
Red pepper
chili
onion
garlic
anchovy
pete cina
salt
sugar
flavoring

Buntil Wrapping Ingredient :
Cassava leaves or papaya leaves

Buntil Sauce Ingredient :
coconut milk
red pepper
chili
onion
garlic
turmeric
alpina galanga
lemon leaves
lemon grass
salt and sugar to taste

Buntil Stuffing :
Mills finely red pepper, chili, onion, garlic, salt, sugar and flavoring
Pouring grated coconut, anchovy, pete cina to the dough 1.a.

Buntil Wrapping :
Heap up 7 plies cassava leaves, put dough
wrapped around as a ball
Steamed within 7 hours

Buntil Sauce :
Mills finely red pepper, chili, onion, garlic, turmeric and alpina galanga.
Prepare frying pan and cook doug 1.c until good smelt ±5 minutes
Pouring coconut milk, wait till its boiled

To serve, prepare a bowl, place the buntil and then pour the sauce.

Roasted Cabbage Wedges

I made this recipe for St. Patrick's Day. I was a little worried that the little boys wouldn't like it. Boy was I wrong! Matthew has asked me to never make red cabbage again. He wants Green Cabbage Wedges from now on. He wants it today, tomorrow, and the next day, and the day after that. I found this recipe on line-- see the link at the bottom.

Ingredients

1 tsp salt
1/4 tsp pepper
1 tsp sugar
1 medium head green cabbage
3 Tbsp vegetable oil
2 tsp balsamic vinegar

Put the oven rack to the upper middle position. Place a cookie sheet on the rack and heat the oven to 450 degrees. Combine salt, pepper, and sugar in a small bowl. Quarter the cabbage through the core and cut each quarter into 1 inch wedges, leaving the core intact. (There will be about 16 wedges.) Brush the cabbage wedges all over with the oil and then sprinkle them with the salt mixture.

Arrange the cabbage wedges on the hot cookie sheet. Roast until the cabbage is tender and lightly browned around the edges-- about 20-25 minutes. Drizzle the cabbage with the balsamic vinegar. And then enjoy!

Sago Ball Soup (Sup Kapurung)

Sago Ball Soup (Sup Kapurung)

Sago ball :
1 cup sago flour (cassava flour)
a bit of tap water
boiling water

Soup :
100 gr Anchovy (or shrimp)
1 tsp turmeric
1 tbsp tamarind paste
1 cm ginger
5 cm lemon grass
1 tsp maggi block
1 tbsp fried shallot
salt
water

chinese morning glory
callalo
any green veggies
corn kernels
tomato sliced
Young mango shradded

Chilli sauce :
habanero/ scotch bonnet
tomatoes
shallots
1/2 tsp shrimp cake (trasi)

To prepare the sago ball, add boiling water into the bowl filled with thick sago paste, leave a minute until it turns transparent, stir fast until all sago is done.

Bring to boil all other ingredients to make the soup (except the chilli sauce and sago ball.)

To serve, add sago balls into the soup, mix veggies and lime. Serves in bowl with shredded young mango.

For chilli sauce, blanched and ground with mortar and pestle.

Vegetable Curry Indonesian Style (Sayur Lodeh)

Vegetable Curry Indonesian Style

1 1/2 cups cut green beans
2 carrots
1/2 turnip
1/2 head cabbage
250 g firm tofu
1 1/2 cups coconut milk
2 cups water

Spice blend

1 inch fresh ginger
1 teaspoon coriander powder
1 teaspoon turmeric
1 teaspoon cumin
1 tablespoon chili powder
2 tablespoons chili paste
2 teaspoons shrimp paste (optional)
2 medium onions
4 garlic cloves
2 stalks lemongrass
20 small dried shrimp, first soaked in hot water to soften
4 tablespoons oil

Chop all the spice blend ingredients and add them to the blender, except the chilli powder. Blend it into a paste.

Combine coconut milk and water to form thin coconut milk.

Cut all the vegetables into small cubes and sticks.

After all the spices are blended, add chilli powder according to your tastes.

Fry it in oil till the oils in the paste ooze out.
Add thin coconut milk and bring it to a gentle boil.

Dump in all the vegetables and tofu and simmer it till the vegetables are tender. Add salt to taste.

Adding pepper is not reccomended.
Serve Sayur Lodeh over rice.

Bali style Mix Vegetables Salad (Jukut Urab)

1 bunch spinach, shredded
1 cup bean sprouts, trimmed
1/4 Chinese cabbage, shredded
150g snake beans, blanched and sliced
1-2 long red chilies, deseeded and sliced
2 tbsp shredded coconut, toasted
1/4 cup peanuts toasted

Dressing :

1/4 cup vegetable oil
2 tbsp lime juice
1 tbsp white vinegar
1 tsp sambal ulek
1 tsp brown sugar

Combine spinach, bean sprouts, cabbage, snake beans, chilies, coconut and peanuts in a large serving dish. Combine oil, lime juice, vinegar, sambal ulek and sugar in a jug.

Pour dressing over salad and toss to combine.

Spicy Snake Beans Saute (Tumis Kacang Panjang Pedas)

250g snake beans, trimmed
2 tsp peanut oil
1/2 cup chicken stock
1 stalk lemongrass, bruised

Paste:
2 medium red chilies, deseeded and sliced
2 French shallots, chopped
2 tsp root ginger, chopped
2 tsp garlic, chopped

Grind or pound paste ingredients in a mortar with pestle, or in a small food processor. If using a food processor you may need to add a little oil.

Heat oil in a wok or frying pan. Add paste and cook for 1-2 minutes. Add stock and lemongrass. Bring to the boil. Add beans and cook for 8-10 minutes or until beans are tender.

Serve warm.

Pumpkin Cookies

Rebekah reminded me that I haven't posted this recipe here yet. This one is a favorite at my house.  I'm already a big fan of pumpkin cookies, but this recipe makes me sing! Fast, easy, take the ingredients right out of the pantry, and yummy!  But, best of all - a ONE point treat!!

 

Pumpkin Cookies

1 box spice cake mix
1 (15 oz. ) can pumpkin
3/4 cup milk chocolate chips

Combine together. Drop by spoonful on a lightly greased cookie sheet. Bake at 350 degrees F. for 18-20 minutes. Makes 3 dozen cookies. 1 point each. (woo-hoo!)

*Hints:

I have found that using name-brand ingredients counts here. I made these once using generic brands, and I'm sorry...they just weren't as good! Here's what I use:

♦  Libby's canned pumpkin
♦  Guittard milk chocolate chips
♦  Duncan Hines (or any of the other name-brands) cake mix

Sweet and Sour Salad Jakarta Style (Asinan Betawi)

400 g carrots, shredded or thinly sliced
400 g cabbage, finely sliced
250 g cucumber, cut into small pieces
200 g bean sprouts
400 g lettuce, shredded
400 g tofu, steamed and cut into small pieces
400 g pineapple cut into pieces
Noodle crackers, fried

Marinade sauce :
100 g sugar
2 tsp salt
2 tbsp sliced red chilies, blended
2 tsp vinegar
200 ml boiled water

Peanut sauce :
50 g peanuts, fried
25 g dried shrimps
2 tbsp sliced red chilies
50 g sugar
1 tsp salt
200 ml boiled water

Marinade sauce :
Put sugar, salt, red chilies, vinegar, and water in a bowl, mix together.

Put cucumber, cabbage, carrots, bean sprouts, tofu, and pineapple into the marinade mixture, let stand for 15 minutes drain.

Peanut sauce :
Blend peanuts, red chilies, and dried shrimps into a paste. Add sugar, salt, and water into the paste, set aside.

How to serve:
In a salad bowl, arrange lettuce, marinated vegetables, and tofu on top.

Pour in the peanut sauce
Serve with fried noodle crackers.

Stir Fried Papaya and Cassava Leaves (Tumis Daun Pepaya dan Singkong)

150 g cassava leaves
100 g papaya leaves
400 g chicken liver, boiled, cubed
100 g anchovies

Spices:
3 tbsp sliced shallots
2 tbsp sliced garlic
3 tbsp sliced red chilies
3 tbsp sliced green chilies
1 tbsp sliced galangal
2 salam leaves / bay leaves
3 tbsp fish sauce
1 tsp salt
3 tbsp cooking oil

Deep fry also chicken liver and anchovy.

Boil cassava leaves and papaya leaves in a pot together at medium heat until done, remove from the pot and drain.
Slice the vegetables about 2 cm each.

Blend all spices into a paste, saute the paste with oil over medium heat. Pour 50 ml water, and season with fish sauce, stir well.

Adds teri, chicken liver, and sliced vegetables, stir thoroughly.

Spoon onto a serving dish and serve.

Fried Spicy Tomatoes Egg Noodles

500 grams fresh egg noodles
4 tablespoons cooking oil
2 (100 grams) stalks chinese greens, cut into 5 cm length
2 (20o grams) tomatoes, quartered
1 cup (50 grams) Thai bird’s eye chilies
1 stalk spring onion, cut into 2 cm lengthwise
2 stalks chinese celery, chopped finely
1/2 cup beansprouts
1 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons sweet soy sauce
1/4 cup hot water

Heat oil in a wok over high heat, cook chilies and tomatoes for one minute.
Toss in greens and quickly cook for 10 seconds. Add the noodles and beansprouts.
Season with salt, white pepper and soy sauce.

Add spring onion and celery. Cook for 3-4 minutes.
Add hot water. Mix well and cover for one minute.
Remove from heat, garnish with sliced tomatoes and serve warm.

Fried Soybean Cake (Tempe Goreng)

Fried Soybean Cake

Get one block of soybean fermented cake, slice accordingly.
Sprinkle some salt on the soybean cake slices
Heat one cup of oil in a small frying pan.
When you can spot some smoke coming out of the surface of the heated oil,
the oil is ready to take in the soybean cake.

Deep fry in batches till brown and slightly dry.
One minute each side is plenty.

How to prepare Spicy Chili and Soy Dip

1/3 cup (30 gr) Thai green small chili
1 1/2 tablespoons white sugar
Using mortal & pestle, grind both ingredients for 3 – 5 minutes.

Mix one teaspoon of the chili paste with three tablespoon of light soy sauce in a bowl.

Set aside the rest of the paste for future use. If refrigerated, the chili base paste can last for a couple of weeks.

If one teaspoon is too strong / too spicy, reduce the amount of paste or dilute furthermore with soy sauce.
