Less Words, More Food 14

Wow ,  Can't tell that I like this format of posting .. this is number 14 in this series ! LOL  It is a handy way to to catch up on LOADS of of food pix I have to share with you . Please if you see something you like, just ask , and Ill write it up as a recipe for you .  On the flip side if there is something you don't like , please let me know so I can fix it or avoid it in the future.  This shots go back to April... that's how far behind I am now ... lol , well after this post Ill be caught up to May .  Enjoy :))

Roasted Red Pepper, Onion & Garlic Hummus :)) 

Put it together for cold roast beef , and chips :)) With hummus and a fresh tomato. A Simple and Easy way to get Creative with your leftovers!!  

My new favourite way to make eggs.,, with the onions and garlic in the same pan !  Mmmm gotta love Free range eggs ! 

Another favourite of mine, Bacon ,Egg and Chips!! Mmm

Doner Kebabs

If there is a food more maligned than the doner kebab then it remains unknown to my palate.



Long the butt of jokes and the final resort of a hungry lush as he or she stumbles back home from the pub via a neon takeaway, the poor kebab as we know it in England is far removed from its original form.

Sweaty mystery meat sculpted into the famous ‘elephant’s foot’ rotates slowly in front of orange hued heater bulbs behind the counters of less salubrious dining establishments throughout the country. Unimaginably long lengths of it are hacked off and crammed into epic flatbreads or warm pitas before being topped with a token salad of four cucumber rings, some harsh raw onion and a few wedges of watery tomato.

The whole lot is finished with a Russian roulette chilli sauce that ranges from the pathetic to nuclear hot and then eaten with gusto, delight and a side order of late onset guilt.



And it tastes great.

Admittedly the average doner diner is three or even four sheets to the wind by the time they get their laughing gear around this culinary oddity that somehow manages to pack a day’s worth of calories into a single polystyrene box. They are chowed down late at night to sate the deep hunger brought on by overindulgence of the grape and grain’s fine nectar.

I can recall many morning after conversations that have included the phrase ‘I must have been quite pissed – I even had a kebab’ and fondly remember one incident when the distinctive doner niff followed us round for an entire Sunday after a heavy Saturday night. Even a shower and a change of clothes wasn’t enough to quell the odour. It was only when my friend reached into his coat pocket for his wallet and pulled out a length of brown meat that the mystery was solved.



In short kebabs tend to be eaten in haste and regretted at leisure when noxious burps scented with onion exacerbate the hangover. They are the guiltiest of guilty pleasures and a gastronomic punchline for a joke that ceases to be funny at about 6 o’clock the following morning when the belly cramps and the head aches.

But this shouldn’t be the case. In its true form, the doner is a thing of beauty: marinated lamb meat, slow cooked into tender softness – warm with spices and rich with natural fat. Blistered flatbreads with that wonderful gentle bitterness. Heat from chillies tempered with cool salad. Hummus. Yoghurt. These are all good things. Great, wonderful tasty things. And more importantly all things you can achieve at home.




Doner Kebabs


OK – this isn’t a true doner. For that you’d need epic amounts of meat of dubious origin, a large vertical spit, six hours of turning and a hungry mob to consume it all. So we cooked a simplified version which was superior in every way.



Once a lamb shoulder had been boned out and butterflied it was covered with a spice mix containing cumin, coriander, chillies, oregano, garlic, lemon zest and olive oil before being tied up and roasted in the oven over a layer of roughly chopped onions.

Three hours at a low heat was long enough to render the meat tender and almost liquefy the onions.

Whilst it was resting we cooked up a batch of flatbreads, made some hummus and a chopped salad of cucumber, tomato, red onion and plenty of parsley.

The lamb meat was shredded with two forks and mixed in with the cooked onions and the fat and juices that had pooled in the bottom of the roasting tray. Heaped into fresh warm flatbreads and then finished off with all the necessary accoutrements it was a meal fit for the gods themselves. Or at least Bacchus.

Three Pre-dinner Dips: Beige, Green and Black

North African Hummus
This is the best hummus in the world. I swear.

















1 14 or 15 ounce can chickpeas, drained and rinsed
1/3 cup tahini paste, well stirred
¼ cup lemon juice (about 1 lemon)
2 teaspoon North African Spice Mix
2 garlic cloves, peeled and coarsely chopped
3 tablespoons extra virgin olive oil
Salt and pepper to taste
Olive oil and sumac, optional

1. Place the chickpeas, tahini, lemon juice, North African Spice Mix, garlic, and olive oil in a food processor and purée until smooth. You may need to add a bit of water to make it a good spreading consistency.
2. Season to taste with salt and pepper. Can make ahead and chill. Return to room temperature for eating.
3. Place in a low bowl. Make a shallow indentation in the middle of the hummus. Pour in a bit of olive oil and sprinkle with sumac. Serve with Za’tar Spiced Pita.

6-8 servings as a dip before dinner

North African Spice Mix
This spice mix is a pain to make. But once it is done you have the fixings for multiple hummus mixtures in almost no time flat.

1 tablespoon cumin seeds, toasted and ground*
1 tablespoon coriander seeds, toasted and ground*
2 teaspoons ground cinnamon
1½ teaspoons ground fenugreek, toast and grind if you’re using chunky fenugreek
Note: You can leave it out if you can’t find it.
1 teaspoon ground ginger
½ teaspoon smoky sweet paprika or regular paprika
½ teaspoon smoky hot paprika or a pinch of cayenne

1. In a small bowl, combine all the ingredients and mix well.
2. Store in a glass jar (like an old spice jar), tightly covered. Label the jar with the contents or you’ll forget what it is. Or I should say, I would forget what it was.

*Note: You can use the previously ground kind as well.

Za’tar Spiced Pita
















1 tablespoon za’tar
Note: This is available at most Middle Eastern or Persian food stores. Go to Zand’s on Solano in Albany, CA if you are in the Bay Area.
1 tablespoon olive oil
OR
1 tablespoon sumac or lemon zest
1 tablespoon white sesame seeds
2 teaspoons cumin seeds, toasted and ground
1 teaspoon dried thyme
1 teaspoon dried marjoram or oregano
1 teaspoon salt
1 tablespoon olive oil

4 rounds of pita bread

1. Turn oven on broil with a rack set 4 to 6 inches from the top element.
2. Combine the purchased za’tar with the olive oil.
OR
Make the za’tar: in a small bowl, combine the sesame seeds, sumac, cumin, thyme, marjoram or oregano, and salt.
3. Measure out 1 tablespoon. Add the olive oil and blend well. Place the remaining za’tar in a glass spice jar and mark the contents for the next time.
4. Cut each round into 6-8 pieces. Arrange the pitas on a baking sheet and spread the za’tar and oil mixture evenly over each. You may not need all of your homemade za’tar mixture.
5. Broil until deep golden brown, 2 to 4 minutes, watching carefully and rotating the pan half way through to brown evenly. It can turn from toasted to burnt in an instant.
6. Serve with the hummus.

Green Olive Tapenade 
















2 cups pitted green olives
½ cup slivered almonds
1 garlic clove, coarsely chopped
2 tablespoons cilantro
2 tablespoons parsley
1 teaspoon lemon zest, finely chopped
1 tablespoon fresh lemon juice
1/3 cup olive oil, or less
Salt and pepper to taste

1. Look the olives over to see if any still has its pit. Remove and proceed. Combine olives, almonds, garlic, cilantro, parsley, and lemon zest in a food processor.
2. Pulse to combine. Add the olive oil with motor running. Process until the mixture is smooth.
3. Add lemon juice and mix. Add some pepper. Taste for salt but probably you won’t need much.
4. Serve with bread, corn chips, crackers or sliced cucumbers.

Makes about 1½ cups, 4-6 as a dip before dinner

Fig and Black Olive Tapenade
















1 cup stemmed and quartered (about 6 ounces) dried Black Mission figs
1½ cups water
2 cups (1/2 pound) pitted Kalamata or Nicoise olives
Juice of 1 lemon
1½ tablespoons whole grain or smooth mustard
2 garlic cloves, chopped
1 tablespoon drained capers
2 teaspoons chopped fresh rosemary
2 tablespoons olive oil or more if necessary
Salt and pepper

1. In a heavy medium saucepan, combine the figs and water. Set over medium heat and bring to a simmer. Partially cover and cook, stirring once or twice, until the figs are very tender, about 30 minutes. Cool slightly, drain, reserving 2 tablespoons of the fig cooking liquid.
2. Look the olives over to see if any still has its pit. Remove and proceed. In a food processor, combine the figs, olives, lemon juice, mustard, garlic, capers, rosemary, and reserved 2 tablespoons of fig-cooking liquid. Pulse to create a thick paste. With the motor running, gradually add the oil. Season generously with pepper and add salt to taste, remembering the various salty ingredients.
Note: There is occasionally a pit in the pitted olives. Without having to check each olive before chucking it into the processor, pulse a couple of times at the beginning. You will hear the rattle of the pit. Stop immediately and retrieve it. Pulse another couple of times to make certain you have them all. Then full speed ahead.
3. Transfer to a storage container, cover, and refrigerate at least 24 hours to develop the flavors. But less time in the fridge is OK too.
4. Bring the tapenade to room temperature before serving. Serve with French bread, crackers, or pita chips.

Makes about 2½-3 cups, 8-10 as a dip before dinner

Hummus and Flatbreads

If you are ready and willing, I’d like to let you in on a little secret.

Ready? Good

Willing? Excellent.



Here we go: you never need to buy another flatbread, pita bread, wrap, tortilla or naan bread ever again.

They are so easy to make, so very tasty, so incredibly fast and so extraordinarily cheap that it makes almost no sense to buy them.

Before I started keeping a ‘mother dough’ in the fridge, I used to make flatbreads with a simple flour and water dough, flavoured with a little salt and olive oil (about 250g of bread flour, 150ml of warm water and seasoning to taste).



Within five minutes it was possible to have a steaming pile of hot, blistered flatbreads ready to be torn apart by hungry guests and dipped into garlicky hummus or wrapped round a spicy lamb kofta.

Now all I do is tear a small handful of dough from the bubbling mass in the fridge, incorporate a little extra flour to make a workable dough, roll extra thinly and cook for 30 seconds on each side in a hot, dry, frying pan.

For pita breads, after the dough has been rolled, fold it over on itself once, then once again to trap a layer of air in the dough. Roll it out and cook as above. It should puff up like a little pillow as steam gets trapped inside the bread. Perfect for slicing open and stuffing with falafel, salad and tzaiki .

We cook these a lot. Brushed with olive oil and sprinkled with salt, they are an ideal snack and near impossible not to eat whilst they are still too hot.



Dipped in hummus, too, they are wonderful. Blitz a tin of chickpeas, some of the reserved water, two cloves of garlic, olive oil and seasoning in a food processor and you have an insta-lunch.

I tend to sprinkle a little smoked paprika over the top as well, just to add a slight warmth and depth of flavour. Just delicious.
