Canadian Butter Tarts
For my Canadian man
A truly Canadian food only found in Canada . Its recipe can be traced back at least one hundred years. It really is Canadian food .I have never been to Canada but I was lucky enough to find myself Canadian man a year and a half ago. He gave me a cookbook (the canadian cookbook History and folklore and recipes with a twist By Jennifer Olge) of Canadian recipes and this was one of them. If you have an oven this is a really great and cheap way to impress your Canadian friends.
It is really good eats.
You will need to make a Pastry
For the pastry you need 2 cups of flour 1 cup of frozen butter 2 table spoons of sugar pinch of salt dash of lemon juice half a cup of ice cold water
Mix together the dry ingredients
Grate the butter and mix in by hand
Add the lemon juice and the water (only adding as much water as needed )
Let sit in the refrigerator for 30 mins
FOR THE FILLING YOU WILL NEED
1 cup of brown sugar (I substitute half of this for maple syrup sometimes ) Dash of cider vinegar 1 tea spoon of vanilla extract 2 eggs 1 cup of corn syrup half a cup of melted butter
Add the brown sugar, cider vinegar, vanilla, eggs and syrup together.
Slowly add the butter.
Roll the pastry into a thin sheet
Cut out pie shells
Heat the oven to 220 c
Now you can choose to add and extra filling if you like Pecan nuts , Walnuts , Raisins or toasted coconut. My favourite is walnuts but I love the smell of coconut.
Place a little of the chosen filling in the tart shell before adding the liquid filling.
Cook for 15 mins they should be gooey if you don't like gooey then cook for a little longer.
