I was happy to receive word today that my friend Chris Cheung, most recently executive chef of Monkey Bar until it was sold out from under him, is now executive chef of an Alphabet City restaurant called China 1.
That restaurant features Shanghainese cuisine. Chris's family is from Toisan, in the deep-south province of Guangdong, but his wife is Shanghainese, and he recently was visiting her ancestral homeland, no-doubt learning about the cuisine in the process, because that's what chefs do.
He apparently also plans to maintain his own custom of using Western ingredients in some Chinese dishes. So his liquid foie gras baozi will find their way to China 1.

Chris Cheung on the move again

Remember Chris Cheung, recently of Monkey Bar until the Glazier Group sold it? Well, it turns out he’s a neighbor. I ran into him while I was running some pre-flight errands before leaving for Charlotte for Nation’s Restaurant News’ Culinary R&D conference. He says he’s not with the Glazier Group anymore. He is in talks to join another restaurant group, but he wouldn’t start until December, so he’s headed for Shanghai. His wife is from the area, so he’s going to visit her village as well as the giant metropolis, expand his flavor palette and generally enrich himself.
Obviously, I wish him the best of luck.

What’s next for Chris Cheung?

The legion of people obsessed with the New York restaurant scene already know that Graydon Carter has bought Monkey Bar, where Chris Cheung was the chef.
I called Chris. He was at the restaurant.
“We’re cleaning it up for Mr. Carter,” he said. “Everything has actually been shipped off on the trucks.” The whole place will be vacated in the next day or so.
But Chris is still working for the Glazier Group, which sold the restaurant to Carter. Chris said they’re still trying to decide what to do with him — maybe give him a corporate position, although Chris says he’d ultimately like to be back in a restaurant where he can showcase his food.
“It’s a pretty good time to look at all your options, I guess.”
He said company principal Peter Glazier has kept most of the staff on the payroll and is figuring out what to do with them.
