Mediterranean Wrap Recipe

Ingredients:

  • 2 whole-wheat tortillas or pita breads
  • 2 cups baby spinach
  • 1 cup sliced roasted red peppers
  • 4 kalamata olives, pitted and sliced
  • 1/2 cup sliced red onion
  • 1/2 cup chopped cucumbers
  • 1/2 cup chopped tomatoes
  • 1/2 cup crumbled feta cheese
  • Olive oil and red wine vinegar for drizzling

Directions:

  • veggies equally each tortilla between drizzle with olive oil and vinegar over a fold to divide work.
  • (makes 2 servings)
