"I wasn't everything you ever wanted" Oh PLease...

I notice that many people post this statement online " I'm sorry I wasn't everything you ever wanted. "

 To me, this translate that your not able to meet to that other persons expectation... whether its on romantic relationships, friendship or even work. I can relate that when you care for some-one, you want them to get the best, and recognize you for it. Even more so, if you have deep feelings or even love for them. and It does give some positive outcome, were you push yourself to be a better person...

 at the same time, we allow that other person to take over out self-perseption. I mean,  " I'm sorry I wasn't everything you ever wanted. " is like saying "Im not giving what you wanted" or "I'm not saying what you want to hear" or "I'm not doing what you want me to do" ... if you step back and look at this few sentences,  you can notice that it seems like your living your life for them...

If a person was to like you, as a friend, team or even lovers, Its because of you... and not for who you should be. I mean, so modifications are good to improve yourself. STILL its the original you that Matters.

For me, rather then saying " I'm sorry I wasn't everything you ever wanted. "  choice to say it this way " Im Sorry, for you did not notice what is in-front of you right now" I know it sounds like ... WHAT???....
But if you think about it and see the difference, you will notice the 2nd sentence is saying that....
 Hey, stop expecting something i"m not, and see and love what i am. for I am beautiful for being ME.

Love yourself, for you are Beautiful and AWESOME.

FOTE BHUGI KHICHDI ( Sindhi)

Ingredients:
Rice ..... 1 cup
Green moong dal (split) ... handful (or little more)
Green Cardamoms..... 3 - 4 ( split)
Cumin seeds .... 1/2 tsp
Pepper corns ..... 5-6 ( optional)
Ghee (clarified butter) ... 2 tbsp
Salt ...... to taste.

Method:
1. Wash the rice and dal together. Soak for at least half an hour.
2. Heat ghee in a pan and add the cardamom, cumin and pepper corns. Do not wait until they crackle. Add the rice and salt and stir fry for a minute.
3. Add double quantity of water ( if rice + dal are one and quarter cups, add two and half cups water)
4. Boil and then simmer until the rice is cooked. You will like the aroma of this rice dish when it is cooking.

Friday Favourites - week 73

XACUTI CHICKEN ( Goa)



Ingredients:
Chicken ........... 500 gms. ( with bones)
Onions ............. 2 (sliced)
Coconut .......... 1/2 cup ( grated)
Ginger paste .... 1 tsp
Garlic paste ...... 1 tbsp
Tamarind paste ...... 2 tbsp ( Less or more according to your taste)
Turmeric powder ..... 1/2 tsp
Salt ..................... to taste
Oil
Coriander leaves ... to garnish.

Xacuti masala ... 3 tbsp ( see recipe HERE )

Method:
1. Clean the chicken and set aside.
2. In a sauce pan stir fry the grated coconut until golden brown. Let it cool.
3. Grind the coconut, ginger, garlic, tamarind to a smooth paste adding a little water. Set aside.
4. In a pan heat a little oil and fry the sliced onions until brown. Add a little water to cook. Grind to paste.
5. Pour a little more oil and put the onion paste and the ground coconut paste. Saute. Add salt, turmeric powder and 3 tbsps of xacuti masala powder. Stir it to mix.
6. Now add the chicken pieces. Stir fry for a few minutes. Add 2 cups of water and simmer it to cook until done.
Garnish with coriander leaves and serve with plain rice.

You can make mutton, pork, crab, fish, prawn, egg or veg curry also using this masala.

I tried out boneless chicken dry preparation using the same recipe with xacuti masala.

XACUTI MASALA ( Goa)


Ingredients:
Dry red chillies .... 6 ( to get nice red colour use 3 Kashmiri chillies and 3 hot red chillies)
Poppy seeds ......... 1 tbsp
Sesame seeds ....... 1 tbsp
Coriander seeds .... 1 tbsp
Cumin seeds .......... 1 tsp
Fenugreek/methi seeds ... 1/2 tsp
Mustard seeds .............. 1/2 tsp
Black pepper corns ...... 1 tsp
Aniseeds/fennel/saunf.. . 1 tsp
Ajwain/carom seeds ....... 1/2 tsp
Green cardamoms...... 6
Black cardamom....... 1
Cloves ....................... 6-7
Cinnamon .............. 1 small piece


Method:
Dry roast all the above and grind. Store it in a clean, sterilized bottle. If you want to make it in a large quantity and store it add sea salt while grinding. This increases the shelf life. But remember to add less salt while making the curry.
This powder can be used for chicken, mutton, pork, egg, sea food and also vegetarian Goan Xacuti currys.
